snowy day baking…i worked on a new cupcake recipe today. i started out thinking i would make a banana cupcake topped with a caramel buttercream..but…i realized halfway thru mixing my buttercream that I had run out of confectioners sugar and so… instead, I made a ganache with bittersweet chocolate and heavy cream. these are so yummy when still warm! i accidentally had two cupcakes already! (and it’s only 1:00pm) oops..this is bad…i really don’t want to gain weight! maybe i should start making mini’s?
chocolate ganache recipe:
1 lb bittersweet chocolate
2 cups heavy cream
1/4 cup light corn syrup
bring cream to a soft boil in a medium saucepan, turn heat off. add chocolate, swirl pan, whisk cream and chocolate together, add corn syrup and salt. let sit for a few minutes before dipping cupcakes…
you will have alot left over…you can let the ganache cool and then roll into little balls and…you have truffles! you can also roll in cocoa powder…
